Ruebourdain history:
Coming from a family who supports him and his chosen vocation unconditionally, many people believe that Kanou has had a relatively sheltered life. He decided to be a chef at a young age, determined to become the best which meant finishing culinary academy a year early, then further studies abroad. Though he has been exposed to restaurants outside the country he is still most passionate about traditional Japanese cuisine. He lobbied hard to get the proprietor of Yugao to take a chance on him despite his youth.

He believes in perfection, constant improvement of one's skill, Michelin stars, and all that jazz. He doesn't mind pulling an all-nighter if circumstances need it. He draws the line, however, at working with people and food that are "below par."

He lives alone in a flat near Rue Bourdain and he is almost always the first person to arrive at Yugao in the morning.
